You’ll love the rich flavour and chewy texture of these healthier holiday cookies – plus, they are paleo, gluten-free, refined sugar-free, and can be made vegan. Best of all, you can swap almond butter for any of our single-ingredient organic nut butters – they are all equally delicious!

Nutrient Breakdown

Almond Butter - Our single-ingredient almond butter is made with organic dry-roasted almonds that are high in minerals including calcium, magnesium, phosphorus, and potassium. Almonds are rich in healthy fats - in particular, ALA omega 3 fats - hello brain food! Almonds are also high in Vitamin E - which is a fat-soluble vitamin responsible for fighting free radicals and helping to repair damaged skin.

How do you make a flax egg?
Flax eggs are amazing for vegan baked goods! One flax egg is made by combining 1 tablespoon ground flax with 2.5 tablespoons of water. Let it sit for 5 minutes to thicken, and use as an egg replacement in baked goods.
Can I swap hazelnut butter for almond butter?
This recipe should work no problem with any of your favourite organic nut butters - though we have only tested it with almond butter.
Are these paleo gingerbread cookies healthy?
Yes! They are lower in sugar, and contain healthy fats and fiber thanks to the almond butter and almond flour. We'd consider them a delicious holiday snack!
Is the "sugar" coating necessary?
It's totally optional! We used lakanto monk fruit sweetener for a sparkly, and sweet tasting coating. This sweetener is a sugar-free alternative.
